Default FablePC video problem.

I just bought Fable for PC. I have installed the games, and created my
settings. However, whenever I start a New Game my video settings reset to the
lowest possible settings, and the resolution is so low that all the menus
don't show up in the screen, so I can't change the settings when I'm in
active gameplay. I have tried loading with Antialiasing on and off, as well
as vertical sync on and off, yet the problem persists.

Computer Specs:
Windows XP SP1
AMD Athlon 64 3200+ overclocked at 2.2ghz
ATI Radeon 9800 Pro 128MB
1GB RAM
Creative Soundblaster Audigy 2 ZS
